Healthy Peanutty Cookies

My friend and blogger, Tammie Nelson of Simple. Healthy. Tasty. came over to our home for a visit the other night and brought her famous Good n’ Healthy Peanutty cookies.

They were so good, I couldn’t stop eating them. Their taste and texture are perfect!

Healthy Peanutty Cookies

  • White Wheat Flour for waffles & peanutty cookies1/3 cup peanut butter
  • 2 Tablespoons coconut oil or palm
  • 1 cup Sucanat
  • 1/3 cup almond or rice milk
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • ½ tsp. baking soda
  • ½ tsp. sea salt
  • 1 cup rolled oats
  • ½ cup carob or dark chocolate chips
  • ½ cup chopped nuts (optional)
  • 2 drops cinnamon essential oil (optional)

Whisk together the first 5 ingredients. In a separate bowl combine flour, soda, salt. Add to the peanut butter mixture and mix well. Fold in oats, carob chips, and chopped nuts. Drop on oiled cookie sheet. Bake at 350º  for approximately 8 minutes.

I had to triple this recipe since one batch wouldn’t last more than five minutes in my house.

Ingredients

  • 1/3 cup peanut butter
